Broccoli Salad

This is one of my Grandma's recipes that she always makes for our family reunions.  Broccoli is not my favorite veggie, but I love this recipe!!  It is so simple to make and a healthy addition to a BBQ or picnic.  In fact, my Grandma often has friends ask for this recipe after they have tried it!!

Prep time: 20 minutes

Ingredients

  • 1 teaspoon sugar
  • 5-6 cups fresh broccoli florets (about 1 pound of florets)
  • 1/2 cup cooked, crumbled bacon
  • 1 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1/4 cup of red onion, chopped (optional)
  • 1/4 cup of rasins (optional)
Directions:
    1. Trim the florets off of the broccoli, cutting large pieces into bite-size pieces, and rinse in a colander.
    2. Combine the broccoli, bacon, and onion in a large mixing bowl.
    3. In a medium bowl, whisk together the mayonnaise, sugar and vinegar. Pour the dressing over the broccoli mixture and stir until everything is evenly coated.
    4. The broccoli salad can be served immediately, but it tastes even better if you cover it and refrigerate it for an hour or two before serving.
